Lemon Slice Cookie Cupcakes

Lemon slice cookies on top of lemon blueberry cupcakes topped with white chocolate frosting.


Lemon Slice Cookies
1. cup softened butter
1. cup powdered sugar, sifted
1/4 tsp. salt
 1/4 tsp. yellow food coloring
1-2 tbsp. grated lemon rind.
1 1/2 cups sifted all purpose flour
yellow sanding sugar

Instructions:
heat oven to 375. mix butter, sugar, salt, food coloring, and lemon rind thoroughly. add flour and blend well. roll 1/4 inch thick on floured board. cut into 2 inch circles, then in half. sprinkle on sanding sugar. place on ungreased baking sheet. bake for 6 to 8 minutes, or until set but not brown, cool. for the rind, roll rounded edge in a mixture of one egg white and one teaspoon water, then in sanding sugar. add thin line of icing (below) 1/4 of an inch of outside edge.
Makes about 6 dozen cookies.
To make icing: Blend one cup of sifted confectioners sugar, 1/4 of a teaspoon salt, and one tablespoon lemon juice. fill pastry bag and squeeze onto cookies. if icing is too thick add more juice or a little water.

Mini Hamburgers and Chocolate Cupcakes

   Today is labor Day its the last hurrah of summer. When I was growing up that meant that school  started the coming Wednesday. For my kids they have already started the new school year. Its been a week already and we are back to the daily routine of packing lunches, homework, and Mom as the taxi. But today we have one last day to sleep in and then go have some fun with friends at the annual Labor day picnic.
  



 The idea for the mini hamburgers came from this blog. http://www.munchkinmunchies.com/2011/06/burger-bites-cookies.html . I used York Peppermint Patties the mini ones for the burgers and red and yellow melted candy melts for the mustard and ketchup.

Fortune Cookie Cupcakes

    The fortune inside my Fortune Cookie said "There will be cupcakes in your future". Well of course there are cupcakes in my future, this was not hard to see I love cupcakes!!!! These cupcakes are special not only do they tell the future they have 2cups of sherbet in them. Swirled together on top of the cupcake with silver dragees  and a candy melt dipped fortune cookie.

Cake Stand Love! (or Cupcake Stand)


   I love rummaging around thrift and second hand stores. This summer I have found 2 glass cake plates for under 7$ each a silver one for 6$ and this wire one at World Market. I am still on the look out for a vintage white or green milk glass cake stand and a cranberry glass cake stand (cupcakes).
