Lemon Slice Cookie Cupcakes

Lemon slice cookies on top of lemon blueberry cupcakes topped with white chocolate frosting.


Lemon Slice Cookies
1. cup softened butter
1. cup powdered sugar, sifted
1/4 tsp. salt
 1/4 tsp. yellow food coloring
1-2 tbsp. grated lemon rind.
1 1/2 cups sifted all purpose flour
yellow sanding sugar

Instructions:
heat oven to 375. mix butter, sugar, salt, food coloring, and lemon rind thoroughly. add flour and blend well. roll 1/4 inch thick on floured board. cut into 2 inch circles, then in half. sprinkle on sanding sugar. place on ungreased baking sheet. bake for 6 to 8 minutes, or until set but not brown, cool. for the rind, roll rounded edge in a mixture of one egg white and one teaspoon water, then in sanding sugar. add thin line of icing (below) 1/4 of an inch of outside edge.
Makes about 6 dozen cookies.
To make icing: Blend one cup of sifted confectioners sugar, 1/4 of a teaspoon salt, and one tablespoon lemon juice. fill pastry bag and squeeze onto cookies. if icing is too thick add more juice or a little water.

Half Moon Cakes or Black and Whites

  Depending on where you live these cookie are either called Black and Whites in New York City or Half Moon Cakes in New England. At least that's what Eileen called them, she was one of the ladies I worked with at Raschel's Ink in Foxboro Ma. The children's clothing store is no longer there but I remember these cookies. I loved them. I never did get the recipe. These I found on Pinterest. These cookies are delicious but not quite as good as Eileen's. Maybe because I made them and not Eileen. Mother's Day Breakfast ,Dinner and Treats

Happy Mother's Day
My husband and kids made me breakfast in bed this morning Grilled Portobello Eggs Benedict with Hashbrowns it was all very good and I was very impressed for dinner they made me Cuban Sandwiches .Would it be to much to ask for the same breakfast next week!




These treats are candy coated Oreos. They were for my little ones in the nursery to give to their mothers .I hope every one had a wonderful  Mother's Day !And a special Happy Mother's Day to my Mother I love you !!!!

Gifts for Christmas

I woke up yesterday morning and it had snowed .My house is clean and I did not have to do it .Christmas music playing .Kids not fighting !!!!! I get to bake !So this is what I did with my time.Candied popcorn for my little ones.For all those who help with  those little ones Chocolate pretzel bites with M&Ms(Poop Decks) and Chocolate Chip cookies for Ernie .He requested them.
